One Ingredient, Three Ways: Peach
When it comes to summer stone fruit, you can’t go wrong with California-grown, sweet, juicy peaches! We challenged our culinary team to come up with a selection of “peachy” recipes using locally grown peaches from Philen Pharms, located just a few miles from Four Seasons Hotel Westlake Village.
Vanilla-Peach Gelato Beer Float
We combined two of our favorite summer treats- beer and ice cream- for the ultimate indulgence. Try our version, which features a vanilla-peach gelato and a housemade peach jam swirl topped with Los Angeles-based Golden Road Hefeweizen, available for a limited time at The Bar and Lookout lounge.
1/3 cup peaches, finely chopped
2 scoops vanilla-peach gelato or ice cream
Bavarian-style Golden Road Hefeweizen (any Belgian style white or wheat ale will work)
1 peach slice for garnish
Tip: For a non-alcoholic beverage, substitute cola or root beer instead of beer
1. Add two scoops of gelato to a small mixing bowl and allow to soften slightly. Stir in chopped peaches until incorporated and transfer to a frosted pilsner glass.
2. Slowly pour 1/3 of the beer over the gelato, tilting the glass at an angle to avoid frothing over. Allow head to settle and pour in remaining beer. Garnish with a slice of peach and serve immediately.

Grilled Peaches with Amaretto and Lite Ice Cream
Our Director of Nutrition, Paulette Lambert, R.D., CDE knows how to dazzle with desserts that are a fraction of the calories of traditional sweet treats– without comprimising any of the taste. One of her most popular recipes is the summertime grilling favorite, Grilled Peaches with Amaretto, served with a dish of lite vanilla ice cream.
4 large, ripe peaches, blanched, peeled, halved, and pit removed
¼ cup sugar
3 tablespoons amaretto liqueur
Lite Vanilla Ice Cream
Fresh mint for garnish (optional)
1. Preheat lightly oiled grill to medium-low heat.
2. To blanch the peaches: Bring large pot of water to a boil. Score the bottom of each peach with an X. Put peaches in boiling water for 2–3 minutes. Use a slotted spoon to remove and place in an ice water bath. Remove skin with a paring knife. Cut peaches in half and remove pits.
3. Place sugar in shallow bowl. Roll peaches in sugar, shaking off any excess.
4. Grill peaches until sugar is melted, about 3–4 minutes. Turn over and continue grilling for 3 more minutes.
5. Brush amaretto on peaches (peaches will flame for a few seconds).
6. Serve with a scoop of lite vanilla ice cream and garnish with a sprig of mint.

Peach Old Fashioned
A new take on an old classic, shake-up this popular cocktail recipe with a peachy twist.
2.5 oz Bulleit Bourbon
.5 oz Crème de Peche
2 dashes Fee Brothers Peach Bitters
2 splashes club soda
2 wedges Philen Pharms Grilled Peaches with Amaretto
1 orange wedge
1 luxardo cherry (for garnish)
1. Muddle peach bitters, grilled peaches and orange wedges in a mixing glass. Pour in bourbon and crème de peche, fill with ice cubes and stir.
2. Strain over a large square or sphere ice cube in an old-fashioned glass. Top with 2 splashes club soda and garnish with a Luxardo cherry.

One of the most popular wedding trends is the use of mirrors and glass. While it’s nothing new to see mirrored surfaces incorporated in the décor (for example, mercury glass vases as centerpieces), we are seeing it used in unconventional ways. “I had one couple that used a large mirror for their seating chart, and another that used mirrored place cards,” says Maggie Takacs, Catering Manager, who also handles the Persian wedding market.
Similar to the popularity of mirrored glass, crystal chandeliers and glass tables are also on the rise, according to Senior Catering Manager Laura Ellis. “Having glass-top tables instead of linens gives the table setting a clean, uncluttered look.”

Dramatic Entrances & Enchanting Entertainers
“I recently had a bride and groom who hired flamenco dancers to entertain their guests as they entered the ballroom for the reception,” says Amy Semler, Catering Manager. “Having professional dancers kicks off the evening’s festivities with a high level of energy. It’s becoming a popular alternative to a bridal party ‘flash mob.’”
Another popular choice for reception entertainment is hiring aerialists to perform a ‘cirque’ style choreographed production number. And grand entrances aren’t always made by the bride or groom: At one recent wedding, it was the cake (a beautiful, multi-layer ‘chandelier cake’ from The Butter End) that came down from the ceiling for the newlyweds to cut.

“We are a very popular venue for Jewish, Indian and Persian weddings, due in part to the fact that we can offer such a range of services to accommodate religious and ethnic customs,” shares Laura Ellis, who specializes in Kosher weddings. “What makes these weddings so spectacular is that they pay tribute to time-honored traditions in a contemporary way. For example, I had a bride walk down the aisle to a Hebrew rendition of an Andrea Bocelli ballad, and I’ve worked with floral designers who can create an incredible chuppah made entirely out of peonies and roses.”

For Amy, who handles the Indian wedding market, cultural wedding practices have become a fun and engaging way for two families to come together and celebrate. “Traditional Sikh Indian weddings involve multi-day events, but the popularity of Bollywood in the mainstream has allowed planners to transform customary ceremonies such as the baraat (the grooms arrival ceremony) into a lively, musical procession.”

Reception Seating and Menu
One trend on the rise is choosing to have a cocktail-style reception with heavy hors d’oeuvres as opposed to a standard, plated meal. The reception seating is similarly casual, utilizing low and high cocktail tables or long, communal tables. “Guests tend to be hungry at the end of the evening, which is why the late-night snack or food cart is still very popular,” says Amy, “Having a tapas-style spread allows guests to nosh on small bites throughout the evening.”

Summer Recipe: Jalapeno-Cilantro Hummus

We’re heating things up for the summer with our spicy new hummus on the menu at Stir at Four Seasons Hotel Westlake Village. Try this delish (and healthy) dish at home with our Wellness Kitchen approved recipe from Director of Nutrition, Paulette Lambert, R.D., CDE.
2 (15 oz.) cans garbanzo beans, rinsed and drained (reserve ½ cup bean liquid)
1 large garlic clove, roughly chopped
1 small jalapeño chili, seeded and roughly chopped
3 Tbsp. tahini
¼ cup lemon juice, freshly squeezed
Juice of 1 lime
1 tsp. agave nectar
2 Tbsp. olive oil
¼ cup fresh cilantro, coarsely chopped
1½ tsp. ground cumin
Pinch of cayenne pepper
½ teaspoon sea salt
For the pita chips
4 whole wheat pitas
Organic olive oil cooking spray
Nutrition Tip: Using 1/2 cup of the liquid from the canned garbanzo beans gives the hummus the same consistency as traditional recipes, but with far less calories.
- Preheat oven to 350° F.
- Place the garbanzo beans, garlic, jalapeño, tahini, lemon juice, lime juice, agave, olive oil, cilantro, cumin, cayenne, salt in a food processor. Process until smooth and creamy (add bean liquid incrementally until desired texture is reached).
- Transfer the hummus to a bowl. Serve with pita chips.
For the pita chips
- Cut pita into 8 wedges. Open each triangle to yield 16 chips from each pita.
- Place pita chips on baking sheet, spray chips with olive oil and sprinkle lightly with sea salt. Bake for 10-12 minutes or until golden brown.
Serves: 10 (¼ cup servings)
Calories per serving: 150
