Mirror, Mirror
One of the most popular wedding trends is the use of mirrors and glass. While it’s nothing new to see mirrored surfaces incorporated in the décor (for example, mercury glass vases as centerpieces), are seeing it used in unconventional ways. “I had one couple that used a large mirror for their seating chart, and another that used mirrored place cards,” says Maggie Takacs, Catering Manager.

Crystal Clear
Similar to the popularity of mirrored glass, crystal chandeliers and glass tables are also on the rise, according to Senior Catering Manager Laura Ellis. “Having glass-top tables instead of linens gives the table setting a clean, uncluttered look.”

Dramatic Entrances & Enchanting Entertainers
“I recently had a bride and groom who hired flamenco dancers to entertain their guests as they entered the ballroom for the reception,” says Amy Semler, Catering Manager. “Having a professional dancers kicks off the evening’s festivities with a high level of energy. It’s becoming a popular alternative to a bridal party ‘flash mob.’”

Another popular choice for reception entertainment is hiring aerialists to perform a ‘cirque’ style choreographed production number. And grand entrances aren’t always made by the bride or groom: At one recent wedding, it was the cake (a beautiful, multi-layer ‘chandelier cake’ from The Butter End) that came down from the ceiling for the newlyweds to cut.

Modern Traditions
“We are a very popular venue for Jewish, Indian and Persian weddings, due in part to the fact that we can offer such a range of services to accommodate religious and ethnic customs,” shares Laura Ellis, who specializes in Kosher weddings. “What makes these weddings so spectacular is that they pay tribute to time-honored traditions in a contemporary way. For example, I had a bride walk down the aisle to a Hebrew rendition of an Andrea Bocelli ballad, and I’ve worked with floral designers who can create an incredible chuppah made entirely out of peonies and roses.”

For Amy, who handles the Indian and Persian wedding market, cultural wedding practices have become a fun and engaging way for two families to come together and celebrate. “Traditional Sikh Indian weddings involve multi-day events, but the popularity of Bollywood in the mainstream has allowed planners to transform customary ceremonies such as the baraat (the grooms arrival ceremony) into a lively, musical procession.”

Reception Seating and Menu
One trend on the rise is choosing to have a cocktail-style reception with heavy hors d’oeuvres as opposed to a standard, plated meal. The reception seating is similarly casual, utilizing low and high cocktail tables or long, communal tables. “Guests tend to be hungry at the end of the evening, which is why the late-night snack or food cart is still very popular,” says Amy, “Having a tapas-style spread allows guests to nosh on small bites throughout the evening.”

Summer Recipe: Jalapeno-Cilantro Hummus

We’re heating things up for the summer with our spicy new hummus on the menu at Stir at Four Seasons Hotel Westlake Village. Try this delish (and healthy) dish at home with our Wellness Kitchen approved recipe from Director of Nutrition, Paulette Lambert, R.D., CDE.

Jalapeno-Cilantro Hummus

Ingredients:

2 (15 oz.) cans garbanzo beans, rinsed and drained (reserve ½ cup bean liquid)
1 large garlic clove, roughly chopped
1 small jalapeño chili, seeded and roughly chopped
3 Tbsp. tahini
¼ cup lemon juice, freshly squeezed
Juice of 1 lime
1 tsp. agave nectar
2 Tbsp. olive oil
¼ cup fresh cilantro, coarsely chopped
1½ tsp. ground cumin
Pinch of cayenne pepper
½ teaspoon sea salt

For the pita chips
4 whole wheat pitas
Organic olive oil cooking spray
Sea salt

 

Nutrition Tip: Using 1/2 cup of the liquid from the canned garbanzo beans gives the hummus the same consistency as traditional recipes, but with far less calories.

Directions:

  1. Preheat oven to 350° F.
  2. Place the garbanzo beans, garlic, jalapeño, tahini, lemon juice, lime juice, agave, olive oil, cilantro, cumin, cayenne, salt in a food processor. Process until smooth and creamy (add bean liquid incrementally until desired texture is reached).
  3. Transfer the hummus to a bowl. Serve with pita chips.

For the pita chips

  1. Cut pita into 8 wedges. Open each triangle to yield 16 chips from each pita.
  2. Place pita chips on baking sheet, spray chips with olive oil and sprinkle lightly with sea salt. Bake for 10-12 minutes or until golden brown.

Serves:  10 (¼ cup servings)
Calories per serving:  150
Calorie equivalent:  1 protein, 1 fat
Pita chips:  8 chips, 100 calories
Calorie equivalent: 1 carbohydrate

Pick up a bottle of wine and head next door to The Old Place restaurant, which is as well known for it’s wood-fired steaks as it is for its history. Similar to Cornell Winery, The Old Place looks like a frontier saloon with weathered floorboards and wide front porch, and offers limited seating– a 20-foot bar and a handful of cozy booths with built-in benches, in addition to a few small tables at the back.

Walls are adorned with vintage decor, old photos of the area and memorabilia, including write-ups of the restaurant dating back to when actor Tom Runyon bought and converted the rundown Hank’s Country Store in 1970. Our food and beverage outlets have embraced wellness for a year now with the Sustained Living menu items, a collaboration between Director of Nutrition Paulette Lambert and Executive Chef Jesse Hansen. These menu items feature fresh, seasonal ingredients and are made with the Wellness Kitchen ideal of eating 50 percent fruits and vegetables at every meal complemented by lean proteins and whole grains.
