This annual tradition at Four Seasons Hotel Westlake Village features a decadent Easter Brunch with seasonal and homemade dishes in an idyllic setting in front of our gorgeous Waterfall Lawn. Highlights include an Artisan Cheese and Charcuterie Station, Classic Brunch Specialties, fresh Seafood and Sushi from ONYX, a Carving Station, and robust Kids’ Spread. To finish, Pastry Chef, Patrick Fahy has crafted an indulgent Dessert Bar featuring Cream Puffs, Easter Cupcakes, rich Chocolate Mousse Domes, Holiday Hot Cross Buns, and Liquid Nitrogen Meringues. In addition to this incredible brunch, there will be live music playing classic tunes.

EASTER EGG HUNT | 10:15 AM 
Guests of the Hotel or Easter Brunch are invited to participate in this fun-filled annual tradition on the Waterfall Lawn—hosted by the Easter Bunny! Treat-filled eggs will be hidden throughout the lawn, waiting for children to uncover the surprise inside. Complimentary coffee and hot chocolate will be offered to all participants. The Egg Hunt starts at 10:15am sharp.

STIR OFFERINGS
The Hotel’s Executive Pastry Chef, Patrick Fahy has crafted an assortment of gourmet sweets and treats for the Easter holiday, offered at Stir, their gourmet coffee shop. Guest can enjoy warm Hot Cross Buns made with fresh housemade brioche, featured in three delicious flavors; strawberry, orange, and blueberry. Along with the Hot Cross Buns, an array of colorful mini meringues bites will also be offered, which include six fun flavors; lemon, blueberry, key lime, strawberry, raspberry and vanilla. To round out Stir’s Easter offerings, the pastry team has created decadent chocolate eggs filled with Easter candies for kids of all ages to enjoy.

Four Seasons Hotel Westlake Village and on-site wellness center, California Health & Longevity Institute (CHLI) have partnered to launch an exclusive virtual fitness training program that can travel alongside the guest, whether on the road or at home. Fit Four All Seasons delivers customized fitness training straight to the guest’s mobile device. This concept combines legendary Four Seasons five-star service and expert advice from trusted exercise physiologists at CHLI, allowing guests to sustain their workout regime and healthy habits from anywhere in the world.

Fit Four All Seasons is designed to give accessible guidance and one-on-one training to client’s based on goals, schedule, and preferences.  The comprehensive program is perfect for frequent travelers, extreme athletes, and locals who want the flexibility of working out anytime, anywhere, at their own pace. This specialized approach to wellbeing provides a customized routine focused on the personal fitness needs and weight loss goals of the user.

Fit Four All Seasons uses state-of-the-art software adaptable to all ages and fitness levels with seamless integration to mobile devices and fitness wearables.  The software allows the exercise physiologists to tailor workouts, and adapt these recommendations as fitness needs change to maximize the client’s success.  Analytics are measured and monitored by CHLI’s expert team and include components such as heart rate variability, exercise duration, distance, intensity factor, blood pressure, body composition, training test score, number of steps, and dietary habits. This allows for real time adjustments and accountability, increasing the success rate of the user.

Welcome New Executive Chef Jose Fernandez


Four Seasons Hotel Westlake Village Welcomes Acclaimed Executive Chef Jose Fernandez

Veteran chef with over 19 years hospitality experience joins the Five Diamond Hotel 

Four Seasons Hotel Westlake Village is pleased to announce the appointment of Jose Fernandez as the new Executive Chef of the Southern California property. Chef Fernandez will oversee the Hotel’s many restaurant kitchens as well as catering, and in-room dining.

A 19-year veteran of hospitality, Fernandez brings a wealth of culinary knowledge and experience to the AAA Five Diamond hotel. Originally from Spain, Jose received his degree from the Culinary School of Barcelona, and began his professional career as a Commis de Cuisine and Chef de Partie in smaller, Michelin-starred restaurants, including El Reco de Can Fabes, under prominently known, avant-garde chef, Santi Santamaria.

Prior to his appointment at Four Seasons Hotel Westlake Village, Jose Fernandez served as Executive Chef at The Peninsula Hotel Chicago, overseeing three of their critically acclaimed restaurants. He was also an established chef at several Ritz Carlton properties including Laguna Niguel, California, New York City, Tucson, Arizona, and Pentagon City, Virginia.

Fernandez joins the Four Seasons health and wellness resort with an aligned philosophy and passion for utilizing organic, local, and sustainable ingredients, creating healthy dining experiences inspired by the destination. His food is rooted in bringing together diverse cultures to craft seasonal dishes and menus. Jose holds true to the values and techniques he was taught as a child stating, “I always remember the smell of my family’s kitchens, the simple and powerful smell of fresh ingredients was truly inspiring.”

When Fernandez is not leading in the kitchen, he can be found spending quality time with his family. He also leads an active lifestyle, favoring cycling around the beautiful surrounding Santa Monica Mountains, and as a Spaniard, he is a fan of futbol or as we American’s refer to it, Soccer.

National Nutrition Month Tips and Recipes


VEG OUT FOR NATIONAL NUTRITION MONTH

We’re celebrating National Nutrition Month by sharing some of our favorite Wellness Kitchen recipes from California Health & Longevity Institute.

Science-based evidence shows that eating 7-10 daily servings of fruits and vegetables will help you lead a longer, healthier life. Director of Nutrition, Paulette Lambert, R.D., CDE suggests that eating a “vegetable-forward” diet can be a lot more interesting than just a side of steamed broccoli, stating “in the Wellness Kitchen, our vegetable-based recipes are packed with so much flavor and fresh seasonings that even the pickiest eaters will enjoy these meals.”

Instead of serving basic, steamed cauliflower with dinner, try an elegant cauliflower soup drizzled with truffle oil. In addition, our crunchy Shaved Brussels Sprouts Salad is not only refreshing and filling, but packs a punch of flavor as well. If you’re looking for a quick and easy vegetable side dish try our Carrot Mash. It’s a delicious substitute for starchy spuds.

Puréed Cauliflower Soup with Truffle Oil

1 Tbsp. olive oil
1 Tbsp. garlic
1/2 onion, chopped
2 stalks celery, chopped
1 small fennel bulb, chopped
6 cups cauliflower florets (3 lbs.)
1 qt. reduced sodium, organic chicken broth
1/2 cup fat free half and half
Sea salt and fresh black pepper
1 Tbsp. truffle oil

Directions:

  1. Heat olive oil in large soup pot. Add garlic, onion, celery, and fennel; sauté until tender, about 4-5 minutes.
  2. Add cauliflower and broth. Bring to a boil, cover, and simmer for 15 minutes until cauliflower is very tender.
  3. Puree soup in batches in food processor or blender, return to soup pot.
  4. Add fat free half and half, salt, and pepper.
  5. Serve in soup bowls, drizzle each bowl with 1/2 tsp. truffle oil.

Serves:  6,  Calories per serving:  120,  Calorie equivalent:  2 vegetables, 1 fat

Shaved Brussels Sprouts Salad

1 pound Brussels sprouts
1/4 red onion
1/3 cup dried blueberries, cranberries, or cherries
1/4 cup smoked almonds, chopped
2 oz. shaved Manchego or Parmesan cheese

Dressing:

2 Tbsp. olive oil
2 Tbsp. Champagne vinegar
1 Tbsp. water
1 1/2 tbsp. honey
1 Tbsp. lemon zest
1 Tbsp. lemon juice
2 tsp. Dijon mustard
1 tsp. chopped garlic
1/3 tsp. sea salt
1/3 tsp. fresh ground black pepper

Directions:

  1. Rinse and drain Brussels sprouts.  Cut end off each sprout and slice in food processor with slicing blade.  Place in large bowl.  Slice red onion thinly and place in bowl.
  2. Mix all dressing ingredients in small bowl, whisking well to combine.  Cover and refrigerate until ready to serve.
  3. Add dried fruit and smoked almonds to Brussels sprouts and red onion.  Toss well with dressing.
  4. To serve:  Mound salad on large platter or swallow bowl, top with shaved cheese.  Season with more fresh ground black pepper if you wish.

Serves:  6,  Calories per serving:  160,  Calorie equivalent:  1 vegetable, 2 fats, 1/2 oz. protein

Carrot Mash

1½ lbs. carrots (about 8 large), cut into ½ inch slices
1 Tbsp. olive oil
1½ tsp. ground cumin
¼ tsp. sea salt
¼ tsp. freshly ground black pepper
1 Tbsp. no trans fat margarine
¾ cup nonfat milk
½ tsp. lemon juice

Directions:

  1. Preheat oven to 450° F.
  2. In a roasting pan, toss the carrots with the oil, cumin, salt, and pepper. Roast, stirring occasionally, until tender and browned, about 20 minutes.
  3. In a food processor, puree the roasted carrots with margarine, milk, and lemon juice. Season to taste with salt and pepper.

Serves: 4,  Calories per serving: 125,  Calorie equivalent: 1 vegetable, 1 fat
