Prologue Chef’s Table Dinner: Savory Summer Grilling

Savor Executive Chef Jesse Hansen’s signature American cuisine during the fourth installment of ‘Prologue,’ our monthly Chef’s Table dinner series at Four Seasons Hotel Westlake Village, California. This month’s menu features grilled favorites and summertime barbecue specialties.

The event will take place on Friday, July 22, 2016 with a 7:00 pm reception followed by a 7:30 pm dinner.

The evening begins with a decadent reception, with hors d’ouevres including Grilled Halloumi Cheese, Housemade Lamb Sausage and Sea Scallop & Sweet Pepper Skewers.Prolog copy

The four-course menu that follows features Honey Chili Glazed Pork Belly, Marinated Octopus and Bartel Farms Grass Fed New York Steak with Bone Marrow Croquette Fries. For dessert, Executive Pastry Chef Patrick Fahy prepares a Sweet Corn Financier with Grilled Peaches, served with Smoked Buttermilk Brown Sugar Ice Cream.

An elaborate wine pairing menu is also available for $39 to enhance the experience.

Kids Summer Culinary Adventure Series


june wk classCalifornia Health & Longevity Institute invites budding chefs ages 9 to 14 to step into the Wellness Kitchen for a fun and informative Summertime Culinary Adventure Series at Four Seasons Hotel Westlake Village.

Led by a Registered Dietitian-Chef, these fun-filled interactive cooking classes demonstrate practical strategies that can improve health and increase longevity. The Wellness Kitchen provides culinary skills and education on healthy and delicious meals.

In addition to the kids culinary series, the Wellness Kitchen is also offering a parents-only Ready Set Cook! class.  In this experience, parents will start the school year off on the right foot with a cooking demo and lunch created for parents interested in finding the simplest ways to improve their child’s health while pleasing the pickiest of eaters.

Classes are held at 11:30 am and cost $65 per child; $50 per additional child. Below please find the upcoming dates for the Kids Summertime Culianry Adventure Series and the Ready Set Cook! parents class:

Top 13 Health-Improving Foods to Keep in Your Kitchen

July is National Nutrition Month, making it the perfect time of year to get fit and fabulous for bathing suit season! Here is a list of 13 health-improving foods to stock up on this summer, courtesy of California Health & Longevity Institute Director of Nutrition, Paulette Lambert, R.D., CDE.

  1. Canned Beans:  Keep a variety of canned beans on hand (kidney, black, pinto, canellini) for a quick and easy source of vegetarian protein.  Rinse and drain, then add to pasta, salads and soups – or eat with brown rice and salsa.  Also, use to make your own hummus or bean spreads.
  2. Frozen Vegetables:  They’re as nutritious as fresh vegetables.  Look for ‘steam fresh’ varieties for quick and easy side dishes.  Add vegetables to take-out, pastas, salads, or low-sodium canned soups.  They’re a perfect way to eat vegetables, even when out of season.Woman at Grocery Store_55786993 2
  3. Frozen Fruit:  Frozen fruit is better than imported when fruits are not in season.  Use frozen berries, mangos, and peaches in smoothies, oatmeal, or desserts.
  4. Foil-Packed Wild Salmon:  Use as an alternative to tuna in order to avoid mercury and get a full dose of healthy omega-3 fats.  No need to refrigerate or use a can opener; just open the ready-to-use package for sandwiches, salads, and pastas.
  5. Organic Nonfat Greek Yogurt:  Choose varieties with under 130 calories to control sugar content.  Add to smoothies, mix with fruit and nuts, or top with crunchy cereal.  It’s a great source of protein and probiotics.
  6. Nuts:  Eight walnut halves or 12 almonds equal one serving of nuts.  Add to salads or pair with fresh fruit for a filling dose of protein, fiber, and healthy fat – the healthiest snack!
  7. Double Fiber English Muffins:  Fiber helps keep us full, regulates blood sugar, and manages body weight.  Use these muffins for sandwiches, pizza, or breakfast to help reach your fiber quota for the day (25-30 grams/day).  One whole English muffin is equal to only one carb serving.
  8. Frozen, Shelled Edamame:  Also known as soybeans, they are a quick and easy source of vegetarian protein.  Use edamame in soups, salads, or as a snack.
  9. Oatmeal:  Choose real, whole, unprocessed oats instead of instant packets due to sugar and sodium content.  It’s always a great option for breakfast – add dried fruit, nuts, and cinnamon for a hearty start to your day.
  10. Shredded Wheat with Bran:  Add this to your morning routine.  Shredded wheat is as unprocessed as it gets – no additives and only 2 ingredients (wheat and bran).
  11. Tomatoes:  Get them any way that you can!  Use fresh, sundried, or boxed tomatoes in soups, sauces, and pasta.  Boxed Pomi tomatoes are a great alternative to canned tomatoes.  Add fresh tomatoes to everything and eat cocktail tomatoes by the handful for a sweet snack!
  12. Apples:  Buy organic and leave the peel on!  The peel provides much of the fiber found in apples; just make sure to wash well before eating.  Add diced apples to your oatmeal, slice thinly for salads or enjoy a whole one as a quick snack.
  13. Bran Buds:  ½ cup has 20 grams of natural fiber. Top with yogurt and fruit.

Meet the Chef: Patrick Fahy, Executive Pastry Chef


Executive Pastry Chef Patrick Fahy

Meet Patrick Fahy, our new Executive Pastry Chef at Four Seasons Hotel Westlake Village. Hailing from the critically acclaimed Thomas Keller destination restaurant, The French Laundry, which most recently earned the Michelin Guide San Francisco highest rating of three stars for the sixth year in a row, Fahy has designed an impressive array of sweet temptations for the Hotel’s dining outlets and banquets menus.

Fahy has also worked in the pastry kitchen at The Ritz-Carlton Chicago, formerly a Four Seasons hotel. It was here where Fahy was introduced to the art of fine dining pasty and developed a passion for becoming a top-rated pastry chef. 

Earlier in his career, Fahy worked in Tuscany, Italy at San Vito in Fior di Selva, where he learned from his mentor, Andrea Bianchini, to utilize local and indigenous ingredients. This experience has remained with the acclaimed chef throughout his career and is still how he approaches his dishes today, always keeping in mind the five senses and giving his guests an unforgettable experience.

At the Hotel, Fahy has sprung into action with new menus in the Lobby LoungeONYXroom service, and most recently Stir - the Hotel’s gourmet coffee bar. When Chef Fahy is not leading the Pastry Kitchen at Four Seasons Hotel Westlake Village, he can be found spending time with his wife and newborn daughter, Mattea.
