Seasonal Favorites at the Pacific MarketStep into the Pacific Market, our newest signature dining experience available every Friday night in the Lobby Lounge at Four Seasons Hotel Westlake Village.  This interactive buffet showcases fresh seafood selections, featuring Executive Chef Alexander La Motte’s locally inspired dishes from land and sea, including seasonal ceviches and our “Highway 101″ chowder.

A variety of mouthwatering dishes are represented on a seasonally rotating menu, many of which feature locally sourced ingredients. The County Line Harvest Kale offers a twist on the traditional Caesar salad, and the Braised Veal Short Rib features pickled turnips picked from our on-site gardens along with cilantro, Swiss chard and basil.

Additional selections include Sausalito Watercress with Radicchio and Asparagus; Local Pacific Halibut with Weiser Farms Potato, Spring Peas and Meyer Lemon; Roasted Pork Loin with Cauliflower, Shallots and Peppercorn Jus; and Vegetable “Gardner’s Pie” with Braised Chard and Yukon Potato.

For those craving for seaworthy selections, our decadent Raw Bar platters featured freshly shucked oysters, king crab and more. Raw Bar platters are available a la carte, and may be enjoyed al fresco on The Lookout lounge, located outside  overlooking the waterfall.

Meet our New Executive Chef

Please join us in welcoming our new Executive Chef Alexander La Motte, on this exciting new position.  Chef La Motte joined Four Seasons Hotel Westlake Village, California in 2012 as executive sous chef, and quickly made a mark for himself worthy of this new promotion.

For nearly a decade, Alexander La Motte has been working under some of the most acclaimed chefs in the world. As Executive Chef at Four Seasons Hotel Westlake Village, California, he is creating his own acclaim in the kitchen using local, seasonal ingredients available from the bounty of Southern California’s farms, fields and ocean, notable at the new Pacific Market on Fridays.

Chef Alexander La Motte

Originally from Rockford, Illinois, Chef Alex’s culinary career began when he enrolled in The Culinary Institute of America, where his natural curiosity and enthusiastic personality helped him excel and graduate with honors in June 2004. He also credits a natural aptitude for math and science for his abilities in the kitchen. “Cooking is like balancing a mathematical equation,” says La Motte. “Adding a little acid or sweetness can completely change the equilibrium of the dish and most of all the sensation you experience.”

His resume reads like a who’s who of critically acclaimed restaurants from coast to coast, working under respected chefs such as Daniel Boulud at Daniel in New York and Daniel Boulud Brasserie in Las Vegas.  During his time at Thomas Keller’s famed The French Laundry,  he was in awe of the care and expertise that went into every element of every dish, inspiring him to become the chef he is today.  His first Four Seasons role was at Four Seasons Hotel San Francisco before coming south to Westlake Village.

One might think that La Motte would be glad to take a break from the kitchen when away from the Hotel. This is definitely not the case for the chef, whose hobbies are centered around cooking. He makes his own pickles, jams, marmalades, mustards and more. “I go a little crazy with pretty much anything I can put into a jar and seal,” he said. La Motte can often be found braising something for a family-style meal for his wife and daughter, giving him a great excuse to utilize his collection of Dutch ovens. His daughter, Lola, is often found watching him in the kitchen. She just might be following in her father’s footsteps as La Motte is confident there is no other toddler with such a diverse palate.

The combination of sweet and tart makes this cocktail a refreshing choice to enjoy on a warm afternoon.

2 oz Vodka
1/2 oz Blood Orange Juice
1/4 oz Triple Sec
1/4 oz Lime Juice

Shake all ingredients and strain into a martini glass.   Garnish with a sliced blood orange.

 

Herb Garden Martini
With a blend of fresh herbs from our on-site gardens, this cocktail is a truly local concoction!

2 oz Hendricks Gin
4 Cilantro Sprigs
4 Mint Leaves
1 slice Jalapeno
1/2 oz Lime Juice
1/2 oz Simple Syrup

Shake well without muddling ingredients,  then strain into a martini glass.  Garnish with sliced jalapeno.


 

 

 

Spring Fever

Guests reserving the Friday Night Fever rate are invited to arrive early to unwind in the Spa at Four Seasons, where an extensive selection of massages, facials and body treatments are available at a special rate of $99 for 50 minutes and $150 for 80-minute services (savings applicable towards treatments booked on Friday only).

Poolside dining at the outdoor Serenity Pool is available on Friday afternoons at a 20% discount for guests staying on this rate (applicable towards food only).  Before things reach a fever pitch, guests can cool off with a selection of seafood on ice at the all-new Pacific Market and Raw Bar, where a 20% dining discount is also available (applicable towards food only).

Surf meets turfSurf meets turf at our all-new Pacific Market signature dining experience on Friday evenings starting April 12, 2013 at Four Seasons Hotel Westlake Village, California.

This interactive buffet features signature dishes from the land, such as Braised Veal Short Rib with Pickled Garden Turnip and Mustard Seed Jus as well as dishes from the sea, such as Local Pacific Halibut with Weiser Farm Potato, Spring Peas and  Meyer Lemon.

The market experience begins with a bowl of our signature Highway 101 Clam Chowder, then sample one of Executive Chef Alexander La Motte‘s signature, seasonal ceviches such as the Local Corvina Bass with Tangerine and Hibiscus and Steelhead Trout with Garden Cilantro, Green Apple and Hazelnut.

Our locally inspired dishes feature ingredients from McGrath Family Farms, Underwood and other neighboring farms located a short distance from the Hotel. Fresh-picked herbs and other seasonal produce such as strawberries and tomatoes are picked from our on-site gardens located around the property.   The a la carte Raw Bar menu of decadent seafood platters with lobster, prawns,  oysters and more is available as an enhancement to the Pacific Market.

Save room for a homemade donut as our chef serves them hot and doughy for the perfect end to your meal.

Younger guests will delight in a sea-worthy addition to our kids’ menu– fish sticks! Our house-made Fish Stix were voted the favorite out of five different varieties prepared by our team of chefs.  Children of Four Seasons employees, including Chef La Motte’s very own daughter, Lola, participated in an all kids taste-test panel to help choose a favorite fish stick and dipping sauce for the menu.
